Pumpkin Protein Muffins (Healthy + Gluten-Free)

Ingredients:

Liquid Ingredients:
• 1 tbsp of Vanilla Extract
• 1 cup of Pumpkin Puree
• Flax Egg 1 tbsp flaxseed meal mixed with 2.5 tbsp water
• 1/4 cup of Maple Syrup
•Dry Ingredients:
• 1/4 cup of Evr Fit Edge Chocolate Protein Powder
• 1 tbsp of Pumpkin Pie Spice
• 1/4 tbsp of Salt
• 1/2 tbsp of Baking Soda
• 1 tbsp of Baking Powder
• 1/4 tbsp of Ground Clove
Note: To create your pumpkin spice blend, mix the above spices in a small bowl until well combined. This mix will yield approximately 3 1/4 tsp of flavorful pumpkin spice, perfect for adding warmth and depth to your muffins.

Instructions

1. Combine the Dry Ingredients: In a large bowl, whisk together oat flour, Evr Fit Edge Chocolate Protein Powder, pumpkin pie spice, salt, baking soda, baking powder, ground nutmeg, ground and clove

2. Mix the Liquid Ingredients: In a separate bowl, blend the pumpkin puree, vanilla extract, flax egg, and maple syrup until smooth.

3. Combine Both Mixtures: Gradually add the dry mixture to the wet ingredients, stirring until well incorporated.

4. Adjust the Texture: If the mixture is too thick, you may add a little more pumpkin puree or water.

5. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean. “Eat these healthy vegan muffins for breakfast or a snack!”
